A smooth kitchen operation is the responsibility of the kitchen manager. At Wings, the kitchen manager:
- Is responsible for food quality and plate presentation, according to company brand standards
- Ensures menu item food quality, and food safety
- Is responsible for the cleanliness of the back of house
- Trains, develops and coaches staff (including tasks performed by dish washers and bus boys)
- Operates as a team with floor staff
- Manages food quality, production quantities, and food waste with batch and hold equipment
- Reviews and sets par levels
- Coordinates actions of cooks to ensure timely assembly of plates (wheel calling)
- Provides input into staff performance and evaluates staff
- Manages uniform and grooming compliance
- Schedules staff (with other manager's review)
- Assigns stations and breaks
- Sends staff home as volume dictates (with oversight of manger on duty)
- Checks side work and prepares kitchen for the next shift
- Completes local food orders
- Assists management with the orders and inventory
